Fiddleheads with Garlic

Serves: 3 to 4 servings
  • 1 tablespoon olive oil
  • 3-5 cloves of garlic, peeled and roughly chopped
  • 2 cups cleaned and dried fiddleheads
  • Salt and pepper to taste
  1. In a small skillet heat oil over medium high heat.
  2. Add the garlic and sauté until fragrant, about 30 seconds.
  3. Add the fiddleheads and sauté for 3 to 4 minutes, stirring regularly. Fiddleheads will be bright green, with some brown spots and slightly softened when done.
  4. Remove from heat and toss with salt and pepper to taste. Serve immediately.
