Jerusalem Artichokes with Lemon & Herbs

  • 2 cups Jerusalem artichokes, chopped to bites size pieces
  • 2 tablespoons oil
  • salt and pepper to taste
  • Juice from half a lemon
  • 1 tablespoons fresh chopped parsley
  • 1 Teaspoon fresh thyme
  • 1 teaspoon fresh chopped taragon
  1. Preheat the oven to 425 degrees.
  2. Place the jerusalem artichokes in a bowl with the other ingredients. Toss well to coat.
  3. Place in the oven and bake for 25-30 minutes or until softened in the center.
  4. Remove from heat and serve.
