Grilled Balsamic Marinated Vegetables

Ingredients

  • 1/3 cup good quality balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • ¼ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Combine all ingredients in a large bowl. Toss with 2 lbs chopped mixed vegetables. Let stand for 1 hour to overnight.
  2. Cook vegetables as desired in a grill basket or on skewers.
  3. Serve warm.
