Salsa is a staple in our house. Chuck eat’s the stuff almost every day. He really loves it over eggs in the morning, and I’m not going to stop him. After all, salsa is all vegetables, and we could use whatever help we can get in that department.
Like just about everyone who’s into canning, I get excited every year at the prospect of tomato season. The one time of year when tomatoes are available in abundance. The one time of year when you can get your hands on a fresh sun ripened tomato. Tomatoes harvest at just the right time and eaten right away can actually be startlingly sweet and flavorful.
Around here, corn is only supposed to be “knee high by the fourth of July” as the saying goes, so that means we aren’t seeing much for fresh ears locally. Thankfully our friends just south of us are already starting to get some perfectly sweet ripe corn and it’s showing up at farmers markets stands. [Read more…]
I already told you about this meal in a heartfelt post last week, but I only posted the fish portion of the meal. Today we are talking about the French Style Potato Salad with Green Beans that you got a sneak peek at previously.
The weather is playing trick on us over here in the northeast. On Saturday it was sunny and 70, Chuck and I were strolling downtown, coat-less in February. Then on Sunday it was snowy, windy and cold, surprisingly this was still pretty nice for February, which is typically one of (if not THE) the coldest months of the year. [Read more…]
