We’ve reached that time of year when you can’t give away summer squash and zucchini. They are everywhere, and everyone is over it. I mean no one in this family truly loves these veggies so we were over it pretty quickly around here. I love a good slaw. That sounds weird I realize, but in all seriousness in this family, we are big on brassicas. We love things like broccoli, cabbage, Brussels sprouts, kale, the list goes on and on. While Chuck is happy to eat cabbage raw by the chunk I really prefer it in a nice vinegary slaw. Seriously, slaw’s our a dinnertime staple in the summer, and pop in the winter now and then too….
Fall is coming on hard these days. It’s is all about sweaters, boots, and pumpkin spice (though I prefer chai). As the weather gets cooler I’m taking the time to enjoy the last of the summer produce. Things like tomatoes and summer squash are making their final appearances at the market for the season. There is nothing like a fresh, well-grown tomato. Those grocery store tomatoes you find in the winter just do not compare….
Something you should probably know about me is that I love potatoes. I eat them pretty much every single day. There are just so many ways you can prepare a potato! They are delicious and good for you. And, they are a great vehicle for sneaking in all kinds of other veggies, which this time of year is a huge priority….
