Wednesday of this week marked the 2017 summer solstice. Not only is it the longest day of the year, but it’s also one of the best benchmarks for the change of the seasons. It’s during these times that I try to reflect on the time that’s past and the time ahead. I like to check in with my goals for the year and make a plan for completing them, or in some cases re-write them completely.

Sweet Violet Syrup

Violets are one of the first things to pop out of the ground in spring, along with tulips and daffodils of course, but the great things about violets are that they are edible. Both the flowers and the leaves can be eaten, and are a great addition to salads, cocktails and to decorate cakes, I mean look how pretty they are!Sweet Violet Syrup

These little babies have been used for centuries for their medicinal properties. Its recorded to have been used as far back as Ancient Greece to prevent headaches and dizziness. I found out that violets actually contain salicylic acid, which the natural “raw” material for aspirin. So it stands up to scientific analysis against these claims.

Sweet Violet Syrup

I had always known that these pretty little flowers were edible but other than salads, and maybe a decorations for sweets, I had no idea what to actually do with them. I mean tossing the leaves and flowers in a salad is easy enough but can get boring pretty fast and honestly I don’t bake all that often. This year however I put in a little effort (thank you internet) and came up with this delightful syrup recipe.

The sweet syrup is a great thing to have around because it can liven up a cup of tea, a simple cupcake recipe or even a cocktail. Because its a simple syrup it can be used to sweeten just about anything (use it like maple syrup or honey), so long as you don’t mind the floral touch or bright purple color it adds.

Sweet Violet Cocktail

To test it out I made a pretty pink cocktail mixing rum, lemon juice and the syrup. We don’t follow exact cocktail recipes in this house, but it came out pretty darn good anyway. I also tried it in my chamomile & mint tea when I had a headache last night and it was a really lovely addition.

Using it as a cocktail got me to thinking about turning it into a wine next. I think a pretty purple wine would be awesome, so that might be on next year’s list of projects.

Sweet Violet Syrup
Prep time: 20 mins
Cook time: 10 mins
Total time: 30 mins
Serves: 2 cups
Ingredients
  • 2 cup water
  • 4 cups violets, loosely packed
  • 4 cups granulated sugar, white
Instructions
  1. Place the violets in a sterile jar large enough to fit the blossoms.
  2. Bring the water up to a boil in a small sauce pan.
  3. Pour the hot water over the violets and seal the jar. Let it stand for 24 hours.
  4. Strain the liquid through a fine mesh sieve, gently pressing any additional liquid from the violets.
  5. For every cup of liquid yielded, add 2 cups of sugar. Stir together over medium low heat until the sugar dissolves. DO NOT BOIL as you will lose the color of the infusion.
  6. Note: If the mixture does boil or the color becomes a dark brown or black add a drop or two of lemon juice to turn the infusion a more pink color.
  7. Store the syrup in sealed containers in the refrigerator for up to a year.

Visiting Friends & Tea Parties

 Recently I was lucky
enough to be selected by Plum Deluxe to be a part of their Tea Ambassador
program. I was given a few select teas and a set of question cards to throw a tea
party. This could not be a better fit for me and my tea obsessed friends, so I
decided to actually have the tea party while Amanda and I were visiting my friend Lindsey.
We had an entire girl’s weekend, full of chick flicks, awesome
snacks, shopping, and lots of good conversation. My favorite snack of the trip
was the goat cheese wontons that Lindsey made, the night that we arrived,
though Captain Scott’s chowder was a close second.
On the first morning over a hearty and delicious breakfast
we decided to break out the Ambassador kit.  I think one of the things that I enjoyed most
about the kit was the conversation cards. Some of the questions asked sparked
long talks and helped me learn some new things about my close friends.

The rest
of the day was spent in bookstores and shops around Mystic. Unfortunately I don’t
have many pictures because it was snowing or raining most of the day, and any
that we took simply did not work out. I’m proud to say that the harsh weather
wasn’t enough to keep these tough northeast chicks in the house and we had a
great time.

To spice things up a bit I decided to make a cocktail out of
the Pacific Northwest Evergreen Mint tea. It took a few different tries to come up with this sweet and minty
cocktail, but I really think it is a great addition to any tea party. You can
bet that I will be experimenting with other tea flavors to make similar
cocktails in the future.

Champagne & Mint Iced Tea (serves 4)
16 oz of water
4 teaspoons granulated sugar
2-3 teaspoons of mint tea
16 oz of good champagne

Heat the water to a boil. Place the sugar in a tea pot or
pan and pour the boiling water over the top. Add the tea in a tea ball or bag
and allow it to steep until it becomes golden and fragrant about 5-6 minutes
(when making iced tea you want the tea to be a bit stronger than a normal).
Remove the tea and set aside, stir the combination to be sure all of the sugar
has dissolved. Fill 4 glasses with ice cubes and pour about ¼ of the hot
mixture over the top. Pour about 4 ounces of champagne into each glass. Add
more ice if needed and serve immediately.

The Perfect Cocktail for St. Patrick’s Day

St. Patrick’s day is coming up fast and I thought it would be fun to share a unique Irish style cocktail. I found this cocktail in a little book that I picked up at 5 below some years ago. I have gotten a number of really great and traditional recipes (this one is my favorite) out of it, so that 5 bucks was a good investment.

Since Ireland is famous for it’s dairy and whiskey this is the perfect thing to help you celebrate the famously Irish holiday. The drink is referred to as Scailton or Milk Punch.

What I like about this cocktail is that it has a rich flavor with out being loaded down with sugar. Though it definitely makes me think of a White Russian, I have to say that I like this better.

Scailton or Milk Punch
Scailton or Milk Punch
Cook time: 10 mins
Total time: 10 mins
Serves: 2 servings
Ingredients
  • 2 cups whole milk
  • 1/2 cup Irish whiskey
  • 1-2 tablespoons honey
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cinnamon
  • fresh grated nutmeg, for garnish
Instructions
  1. Pour the milk and whiskey into a small saucepan. Then whisk in the honey, ginger, and cinnamon.
  2. Heat the saucepan slowly, while constantly whisking.
  3. Do not let it come to a boil. A froth will form on the top. Pour into two warm mugs and sprinkle with nutmeg.

Spring Sangria & Mothersday

Spring is a time of celebration, rejuvenation, rebirth, and
celebration, did I say that already? Well it’s kind of what I am going for
here. Recently we celebrated the 60th birthday of someone near and
dear to my heart and I made this amazing Spring Sangria. It was a hit at the
party and I thought it might also be a hit for your mom this Mother’s Day.

 

Fresh Spring Sangria
1 bottle Spanish White Wine
1 lime, sliced
1 lemon sliced
½ cup sliced strawberries
1 granny smith apple, cored and sliced thin
1 (12 oz) can of seltzer
2 cups mint simple syrup
Combine all ingredients in a large picture. Stir to combine
and serve over crushed ice.
Mint Simple Syrup
2 cups sugar
2 cups water
1 cup packed fresh mint leaves

 

In a small saucepan combine all ingrediants over medium
heat. Bring to a boil, reduce heat and simmer for 4-5 minutes stirring
occasionally, until all of the sugar has fully dissolved. Remove from heat and
let cool before using.
The recipe makes a good sized pitcher but I promise you that
it goes really quickly. It’s super light and fresh, so it’s good for a spring
