This recipe was originally published in 2012 as one of the first recipes to appear on Sweet Love & Ginger (then American Ginger Diaries, I think?). Since then it has remained a family favorite, and one of the only recipes that Chuck repeatedly asks for. I mean if he has to eat seafood it might as well have maple syrup on, it right? It’s the Vermonter in him I suppose….

I love a good piccata in the early spring. The light and bright flavor just sings spring to me, and since lemons are just ebbing out of season it’s a great time to take advantage of that.

For this recipe, I used Pike a white fish that can be found in our fresh waters and also in the ocean (Ocean Pike). I have, however, made this recipe with a few other fish, such as tilapia, bass, or trout, so that’s why that title up there is for white fish. It’s transferable this way….

Thai Salmon Burgers with Canned Salmon

I, like many of you, I’m sure, have dealt with this before and over the years I have found my own way to combat the winter blues.

We’ve got summer interns in the office now and nothing makes you feel old like having a couple cocky young things almost 10 years younger than you hanging around. I mean really, I was one of the youngest people in the office until last week, my whole life ahead of me and all that, now looking at them I almost feel bad because they have so much to learn and suddenly they are looking at me like I know it all.
