Summer is a busy time for us, made busier this year with our new little addition. It’s also very hot out, which means I’m not a fan of standing in front of the stove for a long time. For that reason, it seems like we are having way fewer dinner parties than I would like. In an effort to get-together with more people, a little more often, I’ve started really pairing down my menus to really simple dishes.

This spicy apricot sauce is one of my favorite recipes to make in the summer time when apricots are in season. They are fresh and juicy and just begging to be used in all kinds of dishes from desserts to more savoury ones like this. I like to put away a few jars of apricot preserves each year so that the goodness can last well into the winter season. After spending the day in front of the stove putting up preserves tossing together this dish on the grill is a nice reprieve come dinner time….
Around here, corn is only supposed to be “knee high by the fourth of July” as the saying goes, so that means we aren’t seeing much for fresh ears locally. Thankfully our friends just south of us are already starting to get some perfectly sweet ripe corn and it’s showing up at farmers markets stands….
I realize at this point we haven’t actually completed the third trimester, but anything that happens differently at this point is going to be more about birth than the actual trimester. Also, I wanted to get down my thoughts before they were altered too much by time and events. I’m told that happens.
This trimester has been distinctly different than the others. I mean I’m getting the same questions that I was before, and the answers haven’t changed much, but other things are different. The one thing that everyone has been asking which is a little different lately is if we are ready, and to that my answer is of course not. How can anyone be ready for such a huge life change? Even if you do all the research, have lived with young kids and all the other things, the first baby is a whole new experience. It’s a different experience for everyone, and no one knows what to expect. So on paper? Yeah sure we have all the things, but the reality is we are no more ready than the next new parents.
