Spring Radish Salad with Bacon, & Asparagus Carbonara

Sometimes you simply cannot get your significant other to
agree with you on what should be made for dinner. Sometimes you give in, or
they give in, or you make two totally different dishes and just eat them
together.

I mean it’s not like there are rules to this eating thing
anyway. There is no need to argue about it, let’s all just get along.

In our house it’s usually me wanting salad or seafood and
Chuck turning up his nose at it in favor of heartier meals, with gravy, pasta,
and cheese.  Usually Chuck wins, since I get
a night or two a week on my own often enough to keep my cravings at bay. The
other part of the time we typically find some kind of compromise.

This meal is a pretty good example of that. I wanted light,
fresh and zingy, while he wanted hearty, creamy, and cheesy. Enter a big
bountiful fresh spring salad, and asparagus carbonara. Asparagus is one of
Chuck’s favorite vegetables, and carbonara is one of his favorite pasta dishes,
and I could always go for a little bacon. I think these came together well,
despite being totally different dishes, we were both happily satisfied in the
end.


Bacon & Asparagus Carbonara

¾ lb spaghetti,
1 bunch asparagus, cut into 1-2inch pieces
2 large eggs
2/3 cup grate Parmesan cheese, plus more for garnish
½ tbsp extra virgin olive oil
4 strips of bacon, chopped
2 cloves of garlic, minced
¼ cup dry white wine
Salt & pepper to taste

Cook the Pasta according to package instructions, adding the
asparagus in the last 2 minutes of cooking. Also reserve ½ cup of the pasta
water before draining. While the pasta is cooking beat together the eggs and
cheese in a large bowl. Once finished toss the hot pasta in the egg mixture to
coat. In a large skillet heat the oil over medium high heat, and add bacon.
Cook the bacon until it is crisp, and stir in the garlic cook for an additional
minute. Add the wine to the pan and cook until it has reduced slightly (about 2
minutes). Add the reserved pasta water and pour the mixture over the pasta,
tossing to coat. Adjust seasonings, and serve warm topped with additional
cheese for garnish.
Spring Salad

3 cups spring lettuce mix, loosely packed
1 cup arugula, loosely packed
½ cup alfalfa sprouts, loosely packed
1 bunch radishes, sliced

In a large bowl toss all lettuce with Honey Poppy Seed
Vinaigrette (Recipe Follows) and serve immediately.
Honey Mustard Poppy Seed Vinaigrette (Original Recipe)

2 tbs Dijon mustard
1 tbsp raw honey
1 tbsp champagne vinegar
3 tbsp extra virgin olive oil
1 small shallot, minced
2 tsp poppy seeds
Pinch of salt

In a small bowl whisk together all ingrediants, and adjust
seasonings as needed.

Spring Sangria & Mothersday

Spring is a time of celebration, rejuvenation, rebirth, and
celebration, did I say that already? Well it’s kind of what I am going for
here. Recently we celebrated the 60th birthday of someone near and
dear to my heart and I made this amazing Spring Sangria. It was a hit at the
party and I thought it might also be a hit for your mom this Mother’s Day.

 

Fresh Spring Sangria
1 bottle Spanish White Wine
1 lime, sliced
1 lemon sliced
½ cup sliced strawberries
1 granny smith apple, cored and sliced thin
1 (12 oz) can of seltzer
2 cups mint simple syrup
Combine all ingredients in a large picture. Stir to combine
and serve over crushed ice.
Mint Simple Syrup
2 cups sugar
2 cups water
1 cup packed fresh mint leaves

 

In a small saucepan combine all ingrediants over medium
heat. Bring to a boil, reduce heat and simmer for 4-5 minutes stirring
occasionally, until all of the sugar has fully dissolved. Remove from heat and
let cool before using.
The recipe makes a good sized pitcher but I promise you that
it goes really quickly. It’s super light and fresh, so it’s good for a spring

Garden Plans 2014

It’s finally looking like garden season around here, and I couldn’t
be more excited.

Chuck put together some garden boxes for us. We used these
two years ago at our first place together and they worked wonderfully. Last
year we just cleared a patch of land, since we had good soil we thought the raised
beds would be unnecessary, however we under estimated the excitement of Brody
and his digging ability. We are hoping the boxes will help him understand the
barrier between the garden and the rest of the yard. I’m thinking this will
also help with the weeds; we had a terrible creeping vine last year that was impossible
to keep out of the garden.
I’m also interested to try out the square foot method. I
have trouble pruning, and whittling down the correct number of plants in a
space, and I’m hoping this method will help me with that.
We decided this year to have two 4×4 ft boxes for the main
garden and three 4x ½ ft boxes that we will put along the porch for peas. Chuck
has a pretty big affinity for peas so we want to make sure there are a lot of
them. There will also be a small container garden on the porch for herbs,
because I like the easy access when I’m cooking.
Here is my list of plants: Peas, green beans, yellow beans,
cherry tomatoes, beef steak tomatoes, cabbage, Caesar lettuce, masculine
lettuce mix, spinach, kohlrabi, carrots, heirloom carrots, cucumbers, radishes,
parsnips, peppers, and onions.
My list of herbs (some of these I already have and will just
move them outside): Rosemary, basil, purple basil, parsley, cilantro, mint,
chives, tarragon, thyme,

Spring Reflection

Spring is here, at least is supposed to be. We will just ignore the single digit temperatures of the last few days.
It is the season of rebirth and rejuvenation. Maybe that’s why
I am feeling the need to check back in with myself since the turn of the New
Year. A lot of things have been swirling around in this little head of mine, as
I’m sure they have for you too. Spring does that.
I think it is important to take the time to look around at
where we stand both backward and forward and make conscience efforts to better
our selves. New Years is not the only time that we can do this, it just seems
to be the only time that most of us do.
Sitting down and looking at the past couple months I have made
some huge strides toward some of my goals and been left stagnate on others. If I
were going to rate myself I would probably give myself a C-.
I’m not going to be hard on myself or make excuses, because that’s
all a waste of time. Instead I’m going to take that evaluation and move forward
with it. I’m going to re-establish my goals. Some may alter slightly, my plan
of attack for some might change (since clearly the past one wasn’t working),
and some I may simply drop, or trade for new goals.

I am on a journey to becoming a better person, the person that I
want to be
. It’s going to take a lot of hard work. I know. I also know
that I’m not going to be successful in everything I set out to do. The thing is
that if I don’t try, if I don’t strive for something then what exactly am I doing
here? I don’t want to simply exist. I don’t care if I am remembered or even if I
touch another person’s life. I simply want to live fully and completely love
who I am and what I stand for.
This doesn’t seem like it’s a lot, or that it’s impossible,
it just takes a little effort. Right?

Spinach Artichoke Pasta

This whole week has been just little ol’ me and the Brody Monster haning out a la casa de Ginger. It’s been a while since Chuck has had to be gone for more than a night, and as much as I love having him around sometimes it’s just nice to be on my own.

I have finally gotten some much needed cleaning done, set up some new camera toys and practiced. I bought Tasty Food Photography way back in January and though I’ve read it through I haven’t had much the opportunity to practice what I have learned. Something about a big bearded man craning his neck over my shoulder, asking “when’s dinner” that really puts the ki-bosh on getting the AH-mazing photos I know I’m capable of. I keep telling both him and myself that patience is a virtue, but this week has helped me get my feet back on the ground with it all.

Now let’s get back on track here and talk a little bit about the Spinach Artichoke Wonder-Pot. Call me crazy but I simply cannot understand these “wonder-pot” things that seem to be floating around the internet, I mean even Martha is on that band wagon. I just cannot get behind the idea of dumping everything into one pan, adding water and boiling the hell out of it. Why aren’t we sautéing the onion and garlic? Or getting some good carmelization on the mushrooms people? The point is to make a pasta dish, not coddle, or a pot roast or something.
I know we are all going for ease here, but that couple extra minutes to get some more flavor out the food we are cooking is so worth it. Don’t you think?
Spinach Artichoke Pasta
Dinner 4One: Spinach Artichoke Pasta
Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: Serves 1
Ingredients
  • 1 tbsp extra virgin olive oil
  • ½ cup chopped onion
  • 3 cloves of garlic, minced
  • ½ tsp red pepper flakes
  • 1 14 oz can of artichoke hearts, chopped
  • 1 cup of uncooked pasta
  • 2 cups of vegetable broth
  • 1 cup loosely packed baby spinach
  • 2 tbsp grated Parmesan cheese (plus more for garnish)
  • Salt & pepper to taste
Instructions
  1. Heat the oil in a thick bottomed sauce pan over medium high heat. Add the onion and sauté for 2-3 minutes or until the onion just begins to turn translucent then add the garlic and red pepper flakes.
  2. Cook for 1-2 additional minutes before adding the artichoke hearts, pasta, and broth, stirring well to combine.
  3. Continue to cook stirring regularly until the pasta is aldente. Fold in the spinach and cheese until the spinach has wilted.
  4. Taste and adjust seasonings as necessary. Serve warm with an extra sprinkle of parmesan cheese.
