Homemade Chocolate Dipped Almond Biscotti

Every year for the last several years (ok three, but it
feels like we have always done this) my friend Amanda and I co-host a cookie
party. It’s the kind of cookie party where everyone makes 6 dozen cookies and
then you exchange it’s more like the type of thing where everyone brings
cookies and we eat them, and bring a few stragglers home. We do it this way
because it’s easier for guest to only have to make a dozen or so cookies, and
then we feel compelled to eat less overall.

We make a few extra things such as boozy coacoa, mulledcider, and veggies and dip. I really feel like you need some freshness when you’re
indulging in that many cookies. A nibble of carrot or celery does wonders for
cleansing the pallet and preparing it for the on slot of sugary goodness that
comes next.
It’s a great tradition that I’m so happy to be a part of.
This year I wanted to make something a little difference
than I usually do and tried my hand at biscotti. I was pretty pleased with how
it came out, and it was way easier than I thought it would be. This may be one
of those things that I do all of the time now. I just need to perfect my
chocolate dipping practices, since that was a bit of a trial. It did remind me
however to put a double boiler on the registry, that thing that I dreaded is
starting to seem like a godsend.

Almond Biscotti (adapted from Marth Stewart) Serves 24

2 1/2 cups all-purpose
flour 
1 cup sugar
2 tsp baking powder
1/4 tsp fine salt
3 large eggs
1 tbsp pure vanilla
extract

1 cup sliced almonds, crushed

10 oz. chocolate chips


Preheat oven to 350 degrees. In a large bowl, whisk together flour, sugar, baking powder, and salt. Then beat in eggs and vanilla. Stir in the almonds until well combined. The dough should be crumbly, and a bit sticky. With your hands divide dough in half and transfer to a parchment-lined baking sheet. Form two oval shaped loaves about 3/4 inch tall. Bake for 20 to 25 minutes, rotating halfway through. Remove from heat and let cool on a wire rack for at least 20 minutes. Cut each loaf in half width wise and then cut 1/4-inch slices. Lay the slices on the same parchment lined sheet. Bake at 400 degrees until golden and crisp, about 15 minutes. Let cool on wire racks. Meanwhile bring 1 inch water to a boil and reduce to a simmer. Place a heatproof bowl  in the water with the chocolate. Let it melt while stirring every few minutes. Once it begins to melt remove from heat and stir gently until smooth. Dip the biscotti bottoms into the chocolate smoothing with a spoon where necessary. Let stand for about 15 minutes and serve.

Thoughts on NaNoWriMo

There are a millions thoughts spiraling around in my head right
now about this challenge, it was everything that I expected and everything I
wasn’t prepared for if that makes sense.
The first week of the challenge was easy. I had already mapped out
my story pretty well, and had it sitting in my head for months waiting for the
writing to start so when it did it felt more like relief than anything. After
that I started to realize that I’m not the best writer. I mean I’m not
terrible, but punctuation and proper sentence structure are so not my thing. As
if you needed more examples just look around my blog for a minute. I’m great at
conversational writing, you know the kind of stuff that shirks sentence structure
and has a lot of run on sentences, yeah that is my thing, but you really can’t
do that when you are writing a novel for the masses.
I also realized that while I had mapped out the entire novel I hadn’t
thought about getting from point A to B in a seamless manner. I would write a
paragraph or a whole page and then have to stop re-read and re-write the whole
thing because it was out of character for someone, or it was too abrupt a scene
change. Half of the time I simply wrote a sentence similar to; who starts the argument?
Or How do they get on the roof? Yeah there are a lot of roof scenes in this
one, but what do you expect in a city without power, all they have is the moon.
Towards the end of the challenge I found myself wanting to go back to the beginning
and re-write scenes so that it made more sense with the ending. I know I still
need to do that, but that wouldn’t help me get to those 50,000 words so I had
to fight the urge and it was hard.
I do feel super accomplished that I was able to complete all
50,000 words. I mean that’s a lot of words, a lot of time, and a lot of
thought. It was hard. Not quite as hard as everyone made it out to be; there
were definitely some hard parts, but there were also some easy parts. I really think
that writing character profiles and mapping out the novel gave me a huge leg
up. I also tried to write more than the 1667 words that were required daily so
that it wasn’t a terrible blow if I needed a night off here and there, and I defiantly
did. There was a time in the midst of week 3 & 4 where I was dangerously
behind, but I was able to catch back up without too much heart ache. The
hardest part was when I finished the story at 38000 words and realized all
those part’s I couldn’t write before were the only way that I was going to get
this thing done. Unfortunately around 43,579 words I decided that forcing more words into this book would only take up space and make it worse of a mess than it already was. I was struggling, and while I know now as I knew then that I could get there to the prized 50,000 it wasn’t going to benefit me or my story. I quit just a few days shy of Nov. 30, with a complete draft of my first novel. It equals roughly 175 pages in typical novel text and size. For someone who has never thought to take on a task such as this and who leans away from right brained activities I think that’s large accomplishment. 
Something that I was able to gain from this challenge is an
appreciation for how much I need creativity in my life. I’m an engineer, and my
day is typically spent doing paperwork and crunching numbers so forcing
myself to be creative for an hour each day actually caused a huge bloom in the amount of
creativity elsewhere in my life. I found myself aching to paint, and create
other things around the house instead of coming home and vegging out on the
couch. I feel much more light hearted, and happy than I have in a long time and
I think it’s proof that I need to make time
to create
a priority in my life again. I may not write every single evening, but I will do something and hopefully these
feelings will only continue to flourish.
Overall I am happy with this challenge and I think I gained so
much more than its original intention. It is something that I would definitely do
again. Now to figure out what the next steps are with this novel.

One Pot Chicken Broccoli Alfredo

This is the time of year when one pot meals are like the
best thing ever. It’s because we are all running around like chickens, with no
heads, on no sleep, and with all the stress of the holidays (the fun too).
These meals are lifesavers. It’s especially great when it feed 4 or more. I mean 4
people out of one pan! Yeah it’s a pretty big pan, and it’s a pretty wonderful
pan. I probably should also mention that it takes about 30 minutes from start
to finish.
Do I sound a bit crazy? It’s probably because I am. That
whole book writing frenzy set me a bit behind on the holidays so I’m trying desperately
to catch up now. Eeekgatz!
Anyway you’re here for the recipe so I’ll just get on with
it.

One Pot Chicken Broccoli Alfredo (Serves 4)
4 cloves of garlic, minced
2 tbsp olive oil
1 lb of chicken, cut into strips
1 lb of pasta
3 cups of water
2 small heads of broccoli (or 1 large), cut into florets
1 cup of cream
½ cup grated Parmesan cheese

In a large pan or Dutch oven heat oil over medium high heat
and sauté the garlic for 1 to 2 minutes or until it begins to brown. Add the chicken
and cook until it becomes opaque on all sides, 3 to 5 minutes. Add pasta and
water and bring to a simmer. Cover and cook for 10 minutes. Add the broccoli
and cream and cook for another 5 to 10 minutes. The pasta should be aldente,
and the broccoli tender. Stir in the Parmesan cheese and serve.
