Meatloaf, the American classic.
I know it’s one of those things that rustles up a lot of different opinions, and I get that. I mean it’s a loaf of meat for goodness sakes, but it’s still, in my opinion, one of the best things around.

Making meatballs is a very important skill for the home cook. Aside from the obvious the process of making meatballs can teach a number of different cooking skills. For one learning to work with binding agents, such as breadcrumbs and eggs, is a skill that will help you with other recipes such as meatloaf’s, zucchini or potato fritters and many more. Also working with different types of ground meat with different flavors and fat contents can go a long way in teaching home cooks to adapt their cooking skills. For instance, a meat with a lower fat content has a tendency to dry out when roasting, so it might be prudent to cook them in a liquid or sauce instead or add slightly more liquid (milk or water). All of these lessons can be learned through experimentation, which as always with these cooking lessons, is totally encouraged.

This recipe is one of my absolute favorites. It’s a house staple that’s been around our house for years. I even posted about it long ago. This post is basically a revival post for this bad boy. Favorites deserve that kind of attention, in my book.
This is one of those recipes that has everything I am looking for. It is deceivingly hearty, has a mixture of textures and flavors, and involves very little work. The whole thing comes together in 20 minutes or less! A single serving (2 meatballs, and roughly 1 cup of corn mixture) is about 320 calories, and 37 grams of protein! Not to mention all the benefits from all the different spices. Additionally, it fits into the slow carb diet that Chuck and I did back in January.

Dill pickles are important stuff in this house. We go through a lot of them.
I realize now that all that time I spent complaining about the absolute on slot of cucumbers we had this summer was quite ridiculous. I should have been thanking my lucky stars.
