Campfire Monkey Bread

Monkey bread is a Chuck family staple, and something I had never heard of before I met him. You guys, I was so ill-prepared for the deliciousness. Now I look forward to it, and whenever I see a roll of those pre-made biscuits in Mama Chuck’s fridge I get excited.

During our recent trip to Laconia bike week we camped out at a local camp ground and I was in charge of all the food for our group of about 9 people, which with one Coleman Camping Stove, and a fire pit that had no grate on it was quite the challenge. I learned quite a lot about preparing the food quickly, as well as catering to a number of different preferences, so I think next year I will be much more prepared. There might be a post in there somewhere about cooking for large groups while camping.

For this trip I decided to try out a camping version that I saw online. The premise is pretty much the same except you cook it over the campfire in a Dutch oven.

It came out great, though with a little smokier flavor than I was used to. I also found that in order to cook it evenly you really do need to place hot coals on top of the Dutch oven. Without even cooking you are likely to end up with a burnt bottom and a raw top. Yes, this comes from experience, so believe me!

Campfire Monkey Bread
Prep time: 10 mins
Cook time: 35 mins
Total time: 45 mins
Serves: 8-10 Servings
Ingredients
  • 2 rolls pre-made buttermilk biscuits
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 3 tablespoons cinnamon
  • 1 stick butter, melted
Instructions
  1. Get a good fire going and burn it until there are a number of hot coals.
  2. Meanwhile combine the sugars and cinnamon in a zip lock bag.
  3. Line a fire safe dutch oven with foil and spray with cooking spray.
  4. Cut the biscuits in to bite size pieces and drop each piece into the bag with the sugar. Toss to coat then drop the biscuit pieces into the prepared dutch oven.
  5. Pour the melted butter over the top for the mixture.
  6. Place the lid on top and put over hot coals. Carefully place a few of the hot coals on top of the lid and cook for 30 to 35 minutes, rotating regularly.

Foil Grilled Fajitas

  This is a simple and healthy recipe for Foil Grilled Fajita’s that can be cooked on the grill or over the fire.

Cooking in the summer is annoying.

I will be the first to admit that.

It’s hot outside and the last thing many of us want to do is stand in front of the stove. I employ grill cooking as often as possible to avoid turning the oven on in our house and it does a lot to save us from the heat as well as save us money.

This recipe is easily one of my favorite foil dinner recipes whether it’s over a camp fire or a grill, it comes out delicious and perfect every time. The prep time is minimal, cooking is easy and it’s healthy, so it’s an all around great recipe.

Since Chuck and I are moving soon I actually made up a couple of these recipes in ziplock bags in the freezer. Then we can spend our evenings un packing and settling into our new house without having to think too much about dinner. Just pull it out of the freezer wrap it in foil and stick it on the grill (just be sure to add a few minutes to the cook time to account for starting with frozen food). Because I know you guys are going to ask some of the other recipes that I made up ahead are Crockpot Apple Barbeque Chicken, Herby Burgers, and Sausage, Pepper and Potato Foil Packets.

It’s also great for a crowd; served with a number of different toppings everyone can make their own with little extra work from you! My favorite toppings are beans, rice, fresh chopped tomatoes, cheese, cilantro and avocado, while Chucks favorites are salsa, lettuce, sour cream, and cheese.

Foil Grilled Fajitas
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 4 servings
Ingredients
  • 1 packet of fajita spice mix (or homemade)
  • 1 lb boneless, skinless chicken breast cut into strips
  • 1 red or yellow pepper, deseeded and sliced
  • 1 onion, sliced thin
  • 4 tortillas
Instructions
  1. Combine all ingredients in a large bowl, and toss until everything is well coated in seasoning.
  2. Lay two large pieces of foil out and split the mixture up between the pieces of foil.
  3. Take two opposite sides of the foil and crimp them together to create a tube around the mixture. Then crimp the openings on the side closed to create a packet.
  4. Place on a grill preheated to medium high and cook for 8 to 10 minutes, flip and cook for another 5 to 6 minutes, or until the chicken is cooked through.
  5. Remove from heat and carefully open packets allowing the steam to escape before serving over tortillas.

One Up

Last weekend we got in some camping, with friends before it
gets super cold. We went to this same spot last year, except this year we were
able to get a spot right on the lake. The boy’s did a lot of fishing while I cuddled
up for some good reading in front of the fire, one of my absolute favorite
things to do ever. It did rain on us, but we made it work, and my plan to make
Maple Chipotle Pulled Pork & Beans was a perfect choice to warm us up. I’ll be
posting an over the fire version of this recipe soon enough. 

In the mean time, let’s talk about Pat’s Red Neck Hollandaise Sauce. I mean that kind of decadence while camping is unheard of for us, but it was so good, it may have to be repeated. It’s good to have friends with a similar interest in food.

Pat’s Red Neck Hollandaise Sauce (serves
4-6)

½ cup sour cream
½ cup mayonnaise
1 tsp lemon juice (more if necessary)
½ tsp plain mustard
½ tsp fresh chopped rosemary

Combine all ingredients in a pan and heat over hot coals
until the mixture becomes smooth and creamy. Serve Warm.
One Down
This week was/is a little hectic just like the last few
months have been. I can feel my energy waning, I desperately need to find time
to heal, and detox a bit. I know that Chuck is feeling the same, we have just a
few more weeks of craziness ahead and then hopefully we can dial it back again
and recoup.

Even though my schedule has been a bit of a whirl wind my
mind has been exploding with new ideas and project and I can hardly contain
myself. This busy schedule means I haven’t had a chance to work on anything and
I can feel it starting to tear me at the seams. I cannot wait to have a moment
to flush out some of these ideas.

Brody Story: Camping at our Secret Spot

I’m back again to tell you about the awesome weekend I had with my parents last weekend. I may still be recovering from all of the fun; I’ve been sleeping for days.

On Friday morning my parents packed everything we needed up and headed into the woods. I even had my food and bowls packed up for the trip. We hiked into our secret spot and set up camp, well Mom and Dad set up camp, I had some discovering to do.

 

There were so many sticks you guys! So. Many. Sticks.
One of my favorite things to do was swim in the lake. Whether my parents were tossing sticks for me to get or not I was in that water every chance I got.
On the third day this big spiky thing came into camp and I had to bark and growl at him to get him to go away. Mom said it was a porcupine. I’m pretty sure is was a bear. It was terrifying, but luckily I have a pretty big bark and he moseyed his little tush right outa there.

It was really nice to see my parents without their cell phones, or TV, or computers around. They were able to pay so much more attention to me, and I could tell they are so much more relaxed now. I think we need to do this more often.

 

 

I can’t wait to head back next year.

Brody here!
I’m taking over moms blog for the day because she is busy packing up for our camping trip this weekend. I’m stoked to have four whole days of freedom; I just hope I don’t get into the bees like last year, my nose hurt for days!

Any way I want to tell you about a nice little hike me and the family did last weekend. Mom heard of this hike on her friend’s blog and decided that we should try it out. It wasn’t too far from our house and it was pretty.

 

 

 

I had a lot of fun scaring the bejesus out of my mom by jumping the stone walls at the lookouts. We went on a Sunday and there were A LOT of people. People don’t bother me because I have learned that while we are walking or running we are on a mission, and there’s no time to stop and play, or chase squirrels. There’s too much of the world to see for those kinds of things. However mom and dad kept stopping to read these stupid historical signs, they are dorks sometimes I swear.

 

The trail is super easy, and most of the treacherous parts have been made easy with steel or stone stairs. We finished the whole thing in a couple of hours. The water falls are just as cool as the views. I can see why the natives went through all the effort to get to them. I really think everyone in the area should check it out it’s a lot of fun.

Well that’s all for now, I have to make sure that Mom packs my hiking bag for the trip.
