If you didn’t know this already July was a little crazy. So crazy in fact that I never did a recently post. So we are doing that today, it’s only 7 days late. No big deal. I mean who’s keeping track anyway?

As many of you know we closed on our house last month (happy dance) and we decided to redo our floors ourselves before we moved in (why??). Well we won’t dwell on it, but it got done, and then we had essentially one weekend to move; except we were smart and didn’t plan ahead like we had in other moves, so it pretty much became a mess.

We were able to take a break in the middle of it all and celebrate July 4th on the lake, and it was awesome.

The next few weeks/weekends were all about unpacking and reorganizing. I’ll just skim over the stomach bug that attached both Chuck and myself in the middle of all that. You just don’t want to know.

We did get a few wedding things checked off the list, and parts of the house all settled, so progress is happening. Keep those fingers crossed for me that things can actually get done around here.

Thankfully I was feeling good enough to go to a conference for work, at an amazing resort in Cooperstown, NY. It was a much needed break to say the least; I didn’t even have to cook!

That stomach bug is the reason we never made it camping at the end of the month, but we are hoping to carve out some time for it in august, though that calendar is looking pretty packed too.

I’m falling behind on my 12-12-12 project, but I swear that I will get myself together and get back on track this month.

It’s a very busy and stressful season, but we will get through it. I just need to pick up more tea.

So you’ve heard me wax on about the lack of home cooked food in our lives at present I’m sure, well that diet proved to be worse for us than we thought, both having gotten sick the same week. I’m still working on getting my stomach back to normal, of course traveling for work, and finally making it out for camping didn’t really help in that area. They did offer a much needed break from the tornado of a house we are still working on.

Now we are on a quest to get back on track and especially get in shape for this wedding that is now roughly 6 weeks away. I can’t even believe that. I just can’t, but it’s happening.

Back to the topic at hand.

Spinach & Feta Egg Bake

Getting back on track, to me means meal prep and working out. I’ve been plenty active, my sore back from box moving and scrubbing proves that, but what I need now is a full body workout. I need to build some more muscle, and eat lean healthy food again.

I’m doing pretty good on the goal that I made at the beginning of the year to eat breakfast. It was hard to begin with, since I’m usually nauseas in the morning (nope not pregnant something I’ve had since forever) but I’m starting to move past that. Premade breakfasts help. I can grab them and go straight to work heat them up and eat them there, when my stomach is more settled.

I’ve been looking for a healthier (read less bread & meat) option than my usual breakfast sandwich and have been really loving Greek style omelets. I decided to turn these omelets into an egg bake because that travels so much better. You just pull it out the fridge and cut it like a piece of pie, it’s delicious, easy, full of green power, and protein. What more can you ask for?

 

Spinach & Feta Egg Bake

Spinach & Feta Egg Bake
Prep time: 5 mins
Cook time: 35 mins
Total time: 40 mins
Serves: 6 Servings
Ingredients
  • 1 tablespoon olive oil
  • 1 small shallot, minced
  • 1 (10 oz) package frozen spinach, defrosted
  • 6 large eggs
  • 1 cup milk
  • 4 oz. feta cheese, crumbled
  • 1 tomato, sliced
  • Preheat the oven to 350 degrees
Instructions
  1. Preheat the oven to 350 degrees.
  2. Heat oil in a skillet over medium high heat. Add the shallot and cook until softened, about 1 minute.
  3. Stir in the spinach and cook until most of the liquid has evaporated. Remove from heat and set aside to cool slightly.
  4. In a large bowl whisk together the eggs and milk until well blended.
  5. Gently fold in the feta and vegetable mixture.
  6. Pour the entire mixture into a greased 9” pan and top with sliced tomato.
  7. Bake for about 30 to 35 minutes or until the eggs are cooked through and firm.

Meal Plan 8.2.15 – A Camping Meal Plan

This week I am doing something a little different with our meal plan and making it camping focused. Every year around this time we go on a kind of backpacking trip and it’s something that Chuck, Brody and I really enjoy and look forward to. I thought it would be fun to show you how I plan for a week of camping, and some of the awesome food that we eat along the way.

If you are looking for a normal meal plan go here. We will be back to our normal schedule for next week.

With camping I have to be more involved with the meal plans and include lunch and breakfast as well as dinner so this meal plan will encompass all of that as well.

As this post goes live Chuck, Brody and I are on our way to go camping at our secret spot. After the insanity that has been the last few weeks I could not be more excited to get into the woods and relax! Cultured beef – Would you eat it? I’m pretty sure I’m not ok with it.

I want to applaud John Oliver for this segment. We need more entertainers talking about these types of issues, not just the “hot-button/political” nonsense.

This video made me so depressed. I see this change already between my childhood and my siblings, who are 10 and 16 years my junior. It hits me in the heart to know what these kids are missing out on.
